Small town ND native, Megan is an advocate of good food with a Masters in Nutrition who works with organizations like the Cass Clay Food Systems Initiative, Concordia College, and the Red River Market to build community around a more personal connection to healthy, local, delicious food.

Co-Founder / Community Engagement Director
Brainstormer. Creative. Transfomer. A Concordia graduate with degrees in art, communications, and journalism, Gia provides expertise in content development. A storyteller at heart, she helps provide connections, solutions, and positive changes for our Fargo-Moorhead community and beyond.

Jeff Knight
Co-Founder / Strategy Director
A designer, dreamer, and full-time professor of graphic design at Concordia College hailing originally from Moorhead, MN with a MFA from the Savannah College of Art and Design. Jeff supports the FM community through projects like Cropped, Albino Buffalo, arts education at the Rourke Art Museum and is on the board of directors for The Arts Partnership.

Cathryn Erbele
Lead Designer
Our lead designer is a Concordia alum with majors in Design and Sociology from Fargo, ND. Cathryn has built a portfolio through stationery, poster art, and logo design, but her creativity extends beyond print and into transforming underutilized parts of food into delicious dishes.

Financial Manager / Administrative Guru
Jon loves spreadsheets, but organizing the finances is but a small snippet of what Jon does for Ugly Food of the North -- and for Fargo. An employee of Gate City Bank, Jon is heavily involved in the Fargo start-up community by activating its members to get to work and make things happen.

Food Justice & Security Strategist
Caroline is dedicated to giving a voice to the world’s least privileged. Born in Sioux Falls, SD, she returned to the Midwest after graduating from Florida State University with a dual degree in Environmental Studies and Political Science to coordinate volunteer services at Great Plains Food Bank.

Creative Consultant
A part-time member of the Ugly Food team, Jodi helps create things that bring community together. With a Masters in Philosophy from the University of Chicago and previous jobs at TED Conferences, the Chicago Humanities Festival, and as an adjunct professor, she wants to engage and inspire people to make small changes that will improve the world.
